Once I stepped into this classic New York City steakhouse I knew I had to get a shot of the meat locker where they age their beef. I was attracted to the wooden racks of meat on display. It had a lot of character and patina. I like a lot of detail in my images. Windows faced the street and lobby. I had to get permission and was told I had a New York Minute to do my shot. Fortunately, I had a small camera with a tiny on-camera flash as it was night time. The refrigerated locker was very dark. I know I took a bit longer than a minute as I had to let my camera adjust to the cold temperature. It was probably more like a California minute.
